In the United States, the annual meeting of a leading nutrition research group, the American Society for Nutritional Sciences, sets aside time for a Kellogg-sponsored breakfast meeting for heads of university nutrition departments; an especially memorable one featured samples from the company's line of psyllium fiber-supplemented foods, which were then undergoing test-marketing. That same conference offered research sessions sponsored by trade associations such as the National Dairy Council and the National Cattlemen's Beef Association. |

D. Cholesterol also acts as an antioxidant. A lack of cholesterol in tissues has been identified as a factor in malformation of eyes. Cholesterol is synthesized from (18 units of) the two carbon molecule acetyl-CoA, primarily in the liver (90 percent), but nearly every properly functioning cell can manufacture some cholesterol. The molecular weight of cholesterol is 386.7. (See Figure 1.16 for graphic, Figure 2.9 for cholesterol to hormone pathways, and see also Oxidized cholesterol below)

Magnesium is found in high concentrations in leafy greens, whole grains, legumes, seeds, almonds, black-eyed peas, curry, mustard powder, alfalfa sprouts, avocados, apples, bee pollen, beets, dates, dulse, figs, garlic, lentils, most green vegetables, grapefruit, kelp, eggs, and liver. Vegetarians get more than enough magnesium in their diet.
Manganese, copper, potassium, strontium, and zinc are other minerals that are important in bone and cartilage formation. Plants that contain magnesium also contain these minerals. |

Dilantin can deplete folic acid levels, especially with long-term therapy. Relatively few patients develop frank megaloblastic anemia, but the clinician should be on the lookout for deficiency. Unfortunately, this interaction works both ways. Folic acid can reduce blood levels of phenytoin, so treatment should be supervised by an experienced physician. Occasionally folic acid supplementation (at levels greater than 2 mg/day) has reduced the efficacy of the anticonvulsant, with seizures occurring as a result. This interaction could be troublesome. |

Throughout Central and South America the avocado is not only consumed with great relish, but also highly regarded for its extremely nourishing properties. It is a favored saying among the Maya Indians inhabiting the Yucatan Peninsula and the highlands of Guatemala that where avocados grow, "hunger (or malnutrition) has no friends."
Too many of us think only of avocados in the traditional Mexican sense of guacamole. But among the Mayan the avocado is considered to be a food which keeps the joints of the body moving freely and the skin young and supple. |

Persimmons of persimmon so valuable as natural aids for dental hygiene. In various marketplaces in Nigeria, Ghana, and other countries on the continent, persimmon twigs and unripe fruit cut in half can usually be found. These "chewing sticks" as they are called, are first washed, then gnawed on the tip to macerate it so that the end is frayed and brushlike. The teeth are brushed very thoroughly, and care is taken to clean both the inside and the outside of the tooth surfaces. |

An Amish lady by the name of Mrs. Byler—I never got her first name—wrote to me some time ago from Smicksburg, Pennsylvania. Her family was bothered with various dental problems, which she listed for me in her letter, and she wanted to know what could be done about them. Her husband had rather bad tooth discoloration due to the nicotine from the cigars he smoked and the tobacco he chewed. She suffered from a continual buildup of dental plaque and tartar. |

During the weekend of August 13-15, 1982, I gave an extensive workshop at the Natural Health Ranch in Tunnel Hill, Georgia. It was widely promoted, including an interview with me by reporter George W. Brown from the Chattanooga News-Free Press.
Mr. Sam Waters read about it in this newspaper and came all the way from Sweetwater, Tennessee to hear my concluding lecture on Sunday. I mentioned how boiled pumpkin juice had been used by some Hopi and Zuni Indian folk healers in Arizona to treat various cases of leukemia with modest success. |

B6. Such a deficient formula could lead, the Times said, to "permanent injuries, including brain damage, cerebral palsy, and mental retardation."14 The situation was discussed at length in my cooking class that day; coincidentally, one of my students had fed her child that very same formula. Indeed, he had developed a serious neurological defect that impaired both his learning and his behavior.
How many more defects in formulas could still be undetected? How many more mistakes will we discover we have made by trying to override the natural system? Clearly a problem exists. |

A. Other minerals, such as iodine, magnesium, and sodium, are also needed in increased amounts. For years, obstetricians were advising pregnant women to avoid sodium, but now they are suggesting that they use it as usual. For most women, some added salt is fine, and they can eat foods that naturally contain sodium, such as celery, beets, red meats, cheese, eggs, and scallops. The craving that some women have for pickles, olives, or sauerkraut may be related to a need for sodium. |
B3, acts as a vasodilator, increasing blood flow to the skin and many other parts of the body. Some people also experience sexual stimulation from this niacin flush. Zinc seems to be especially related to male fertility and sex drive. Low zinc levels may lead to impotence, a low sperm count, and a loss of sexual interest. However, taking more than 100 mg. daily is not recommended as this can reduce immune function and absorption of other minerals, such as copper and manganese. Prostate health and testosterone hormone production may also be influenced by zinc. |

Glutamic acid (glutamate) is simply converted to glutamine and is synthesized from argi-nine, ornithine, and proline. It is abundant in both animal and vegetable proteins and is found in high concentrations in the human brain. Glutamic acid, which is important to brain function, is the only amino acid metabolized in the brain. The conversion of glutamic acid to glutamine helps clear potentially toxic ammonia. |
B6 twice daily, whereas D- and DL-phenylalanine work better for affective (lack of positive attitude or emotional enthusiasm for life) depression. Phenylalanine is better absorbed than tyrosine and produces fewer headaches, so may be more useful in depression than L-tyrosine. Both DL- and D-phenylalanine are helpful pain relievers in certain musculoskeletal problems, and this is their primary use currently. Aspartame, the new nutrient sweetener, is synthesized from the combination of aspartic acid and phenylalanine. |
B17. At that time, as today, they were not sure whether it was essential to life.
Pangamic acid is also found in whole grains such as brown rice, brewer's yeast, pumpkin and sunflower seeds, and beef blood. Water and direct sunlight may reduce the potency and availability of B15 in these foods.
Functions: Pangamic acid is mainly a methyl donor, which helps in the formation of certain amino acids such as methionine. It may play a role in the oxidation of glucose and in cell respiration. By this function, it may reduce hypoxia (deficient oxygen) in cardiac and other muscles. |

While there is no argument that a diet high in carotenes is protective against cancer, the big question is: "Can beta-carotene supplementation reduce the risk of cancer?" The answer appears to be that synthetic beta-carotene supplementation does not. Three highly publicized reports on cancer prevention trials featuring synthetic all-trans beta-carotene in high-risk groups have produced negative results. |

The heart and skeletal muscles, as well as many other tissues, depend primarily on fatty acid oxidation as a source of energy. Since they cannot synthesize carnitine, its transport into these tissues is of critical importance.

Despite their nutritional payload, juices should be used to supplement fresh fruits, vegetables, and grains in your diet, not replace them, says Dr. Campanelli. As good as juices are, they doesn't contribute much toward the 20 to 35 grams of fiber that adults need each day. For example, while eight carrots provide 17 grams of fiber, a 6-ounce glass of juice has a measly 2 grams. |
