Combine the nut milk and vitamin C crystals; stir and let stand to dissolve. In a large mixing bowl, combine 2-1/4 cups of amaranth flour with starch, sea salt and ground seeds; whisk together gently.
Next add the liquid with the dissolved crystals and olive oil to the flour mixture. Mix the batter with a wooden spoon. Sprinkle a little of the remaining half cup of flour in a circle centered on a baking sheet. Put the rest of the flour on a piece of wax paper.
Dissolve the baking soda in the boiling water; add to the dough and stir.

Fresh rose hips contain 60 times as much vitamin C as oranges, and rugosa roses, with their large round fruits, are considered to have one of the highest contents. I've had the pleasure of eating some of them raw in the dead of winter in the high Uintah Mountains here in Utah. I ate only the walls of the hips and spit out the seeds. A (retinol) were telated to regression of cervical dysplasia, especially in HPV-16-positive women. Nagata et al. (1999a) conducted a follow-up study in 134 women who had been histologically diagnosed with cervical dysplasia (from October 1987 to September 1988). Every 3 months, the women were examined with cervical smears and colposcopy (a visual examination of the cervix and vagina using a lighted instrument).
