A study from the University of Maryland School of Medicine has found that consuming high doses of vitamins c and e before a high-fat meal may counter fat's ill effects. Researchers believe these vitamins somehow prevent triglycerides, a type of blood fat, from stopping blood vessels from releasing nitric oxide. Nitric oxide allows vessels to relax and widen, facilitating healthy blood flow to the heart.
Their study found that before a fatty meal, blood vessels could widen by 21 percent to accommodate the sudden rush of blood, but four hours after, could widen by only 8 percent. |
The theory is that vitamins c and e, plus beta-carotene and other carotenoids, as well as the minerals selenium, copper, and manganese, may be instrumental in supporting good health through their actions in the body.

You may want to take extra zinc and the antioxidant nutrients: vitamins c and e, beta-carotene, and the mineral selenium. The B vitamins are important, too, since research suggests that they're depleted by chronic stress.
Rather than taking a fistful of individual pills, perhaps your best bet is to choose one good-quality daily multivitamin/mineral supplement. Look for a formula that contains extra amounts of the antioxidants.
