ANTIOXIDANTS
The vitamins c, E, and beta-carotene, along with the mineral selenium, and many of the phytochemicals discussed later, are antioxidants, which protect our bodies against the damaging effects of an excess of substances called "free radicals."
Everyone produces free radicals in the process of creating energy and this is quite normal. However, excess may be produced by various factors, such as stress, tobacco smoking, pollution, sunlight, radiation, illness, and so on. |

Since your control over dietary free radicals and refined foods may not always be optimal, and in light of the increasing threat to our health from environmental pollutants, it is crucial to take supplemental antioxidant nutrients, even if only vitamins c, E, beta-carotene, B complex, and the minerals selenium, zinc, manganese, and copper. All of these are usually found in most good multiple vitamin/mineral formulas. Try to get in the following dosages every day:
Vitamin C: 500-1,000 mg two to three times

Even though vitamins c and E and beta-carotene are the best-studied of the antioxidants, they're only a small part of a massive army of protective compounds found in foods. For example, the minerals selenium and zinc also act as potent antioxidants. So do the phenolic compounds in green tea and the flavonoids in red wine. "We all agree that everyone should eat at least five servings of fruits and vegetables a day to ensure that they get healthy amounts of all of these antioxidants," explains Dr. Ordman. |

An antioxidant formula commonly contains any or all of the following: vitamins c, E, beta-carotene, B-l, B-2, B-3, B-5, B-6; the minerals zinc, copper, manganese, and selenium; and amino acids L-cysteine or N-acetylcystein, methionine, and sometimes glutathione. Also included may be coenzyme Q-10, lipoic acid, and others. Individual antioxidants in higher doses are commonly used, such as vitamin C and beta-carotene. In addition to vitamins c and B5, it's also wise to take B6 and zinc, which also aid the synthesis of acetylcholine. Usually, a good multivitamin will supply enough of these cofactors.

Stoner adds, "Berries contain many potential protective substances including vitamins c and E, folic acid, other phenols (besides ellagic acid), various carotenoids, and anthocyanins." All of these substances work together, he believes, to nip cancer in the bud.
Heals your heart. Those same antioxidants that fight cancer, Stoner's findings suggest, also make strawberries tough against heart disease. "The berries reduce levels of blood cholesterol by about 10 percent," Stoner says, "so they could have some protective effect on cardiovascular disease. |

The best way, then, to beat stomach cancer is to cut down on smoked, barbecued, pickled, salted, and cured meats and fish, and eat lots of foods rich in vitamins c and A.

Most were not in the habit of eating foods rich in vitamins c and A, which, together with other antioxidants, prevent the formation of nitrosa-mines in the stomach. (Nitrosamines are potent cancer-producing substances that form when nitrates—chemicals present in some water supplies, cheese, and cured meats—combine with normal bacteria in the intestinal tract.) People with stomach cancer also tend to be poor, so their diet is usually high in refined, processed starch and low in fresh fruits and vegetables. |

The lens can partially protect itself from this free radical damage, and it relies on certain nutrients to keep its defense system strong. vitamins c and E, beta-carotene (a precursor of vitamin A) and minerals such as selenium, zinc and copper—all components of antioxidant enzymes found in the lens—may all play roles in protection. Even B vitamins such as riboflavin and B12 as well as an amino acid called cysteine may be involved, but evidence for these nutrients is very slim, says Randall Olson, M.D. |

You also need a variety of vitamins, including vitamins c and A. The body uses vitamin C to make collagen, a tough protein fiber that keeps the gums strong. Vitamin A is used to form dentin, a layer of bonelike material just beneath the surface of the teeth.
It's easy to get enough of both of these nutrients in your diet. A half-cup serving of cooked broccoli, for example, has 58 milligrams of vitamin C, almost
