Fruits and vegetables contain easily absorbed vitamins and minerals, calories for immediate energy production, and vital phytonutrients. These naturally occurring plant nutrients protect us from disease, help heal imbalances, and accelerate the healing process. To make fresh juices, which are superior to bottled juices, you will need a juicer. The centrifugal force juicers are easy to clean and extract juice well from the pulp of the plants. If you have an orange juice squeezer, you can make fresh citrus juice.

These protein sources are less likely to raise homocysteine and are full of disease-fighting and healthful minerals, vitamins, and phytonutrients. • Choose small fish (like sole or sardines) or egg whites as a high-quality protein source. • Try soy products including tofu, edamame, soy milk, soy nuts, soy butter, and tempeh. • When eating animal protein, choose lean sources such as poultry, leaner cuts of meat, or wild game such as elk and deer, which are low in saturated fat.

Most of the herbs and spices we include here also contain antioxidants and phytonutrients that help combat the ravages of time and give your system an extra boost of healing power. Some of them even help the body to use insulin more efficiently. Although most of the health claims for these herbs and spices are drawn from traditional Okinawan folk medical practice and are untested at this point, other claims have been borne out in clinical trials. Add these herbs and spices to vegetables rather than butter, margarine, cheese, or sour cream, and watch the caloric density of your meal drop!

Numerous cultures have recognized the beneficial health effects of these crops, and now even Western science has identified many of the healthful phytonutrients found within them. For example, cruciferous vegetables (such as cauliflower and cabbage) contain the compounds known as sulfurophanes, isothio-cyanates, and indole-3-carbinol. All three can activate beneficial functions in the body, can improve detoxification by the liver, and can activate certain liver enzymes such as glutathione-S-transferase, which helps your body detoxify from pollution and toxic waste.

Fiber may owe its healthy protective qualities to several substances it contains, including lignans and folate, found in whole grains, and various other Just the Facts • Fiber is a complex carbohydrate that has no calories and usually has many phytonutrients that help protect against cancer and cardiovascular disease. • Fiber (CD 0.0) not only reduces a food's caloric density but also helps you feel full on fewer calories. • High-fiber foods give you a lot to eat for very few calories and take the edge off your appetite for longer than many other foods.
Some are rich in powerful phytonutrients that can protect against a wide range of cancers, cardiovascular disease, and other chronic illnesses. Using herbs in cooking is a safe and tasty way to incorporate them into your diet—as opposed to taking them in supplement pill form. Fresh herbs are best. A rule of thumb for using fresh herbs is to double the amount when a recipe calls for the herb in dried form. The many herbs, spices, and flavorings in the Okinawans' cooking arsenal not only contribute extraordinary flavor to various foods but offer weight and health benefits as well.

Soy milk is an excellent source of disease-fighting phytonutrients. I recommend that you use soy milk in place of cow's milk in your new way of eating. Skim milk and fermented skim-milk products, such as yogurt and buttermilk, can help the body prevent and fight cancer when used in small amounts. I recommend limiting your intake of these products to about 2 cups per week and as called for in Permanent Remissions recipes. Soy plays such a vital role in the Permanent Remissions Plan that I've devoted a separate chapter to it.

Flourless, sprouted seven-grain bread is particularly rich in phytonutrients. Add organic almond butter to a seven-grain English muffin and wow! Energy without side effects. For extra flavor, spread a stamp-sized drop of pure honey on top. Served with fresh fruit, seven-grain bread with almond butter makes an excellent breakfast. It also works well as a mid-meal pick-me-up. For lunch, I suggest avocado or hummus on either standard or flourless, sprouted seven-grain bread.
As I'll explain in subsequent chapters, fresh foods abound with antioxidizing enzymes and phytonutrients. Fresh fruits and vegetables have the power to heal, restore, and sustain your energy level. They promote a highly efficient metabolism, nurture the liver, stimulate the glands, and regulate hormonal balance so that you can burn fat fast. They accelerate the conversion of other foods into energy. Devitalized, dead items, such as slaughtered meats and canned goods, are much more difficult to metabolize.

This resin contains a complex mixture of phytonutrients called diterpenes and esters, as well as guggulsterones. Research in the mid-1960s was the first to clearly demonstrate that guggul significantly lowers cholesterol. There have been more than twenty clinical studies since then showing that guggul not only can lower blood cholesterol and triglycerides, but also can lower LDL and raise HDL. Comprehensive pharmacological studies done on animals and humans have shown that this safe and effective agent can lower cholesterol by up to 30 to 40 percent.

You might think that the more, the better, but unfortunately, the quantity of phytonutrients doesn't determine the quality of the supplement. Three sources of flavonoids listed on a label, for instance, might seem impressive. But, notes Dr. Prior, that number is small compared to approximately 4,000 different flavonoids in all of the different fruits and vegetables. The best policy is to select a major store brand or a product from a major manufacturer, who has more to lose if it's revealed that a product doesn't deliver what it promises, McCord suggests.

Its leaves, berries, and blossoms contain powerful flavonoids and proanthocyanidins as well as a host of other phytonutrients with health-promoting effects. Its chemical nature is very complex, so for this discussion I will focus on the flavonoid components' contribution to health. Remember, flavonoids are a group of flavone-containing compounds that include many of the colorful plant pigments that are found widely in nature. Plant pigments such as bioflavonols, proanthocyanidins, and anthoxanthins are but a few of the compounds that are included in the flavonoid group.
Research on phytonutrients has shown that people who eat more fresh fruits and vegetables have a lower incidence of heart disease and cancer. In addition to containing many fruits and vegetables, the Mediterranean diet also includes legumes such as lentils and chickpeas, which will also decrease insulin levels. Legumes are an example of a food high in complex carbohydrates with a low-glycemic index. Every carbohydrate, from peaches to pasta, has a different glycemic index that governs the rate of glucose entering the bloodstream.
The Mediterranean diet not only contains more healthy fats, but also lots of fiber, good sources of protein, and many of the nutrients, antioxidants, and phytonutrients we need for optimum health. Studies show that northern European populations such as those of Scotland and Scandinavia have a far greater incidence of coronary artery disease than do the Mediterranean populations of Greece and Italy. Why is this so? I believe it is because there is something heart protective in the Mediterranean diet.
Since these phytonutrients impact other cholesterol interactions, it can be assumed that these factors are also associated with a cholesterol-lowering effect. Thus, it is important to consider that food high in dietary fiber, rather than just fiber supplements alone, is the way to go. Increasing intake of starch and fiber, reducing consumption of sugar and salt, and avoiding as much unhealthy fat as possible should not present any major difficulties. We do not deprive ourselves if we consume fiber. The risk/benefit ratio is exceedingly high.
After I discuss basic nutrition, you will see that the optimal diet is one that includes phytonutrients and fiber and balances healthy fats, carbohydrates, and protein; it is the modified Mediterranean diet, which I will discuss in chapter six. OBESITY AND FUTURISTIC MEDICINE In addition to viewing obesity in terms of caloric intake, levels of activity, and insulin resistance, it is also useful to explore the insights that genetic research can give us. Is obesity related to the genes?

HIGH-FIBER FOODS: Natural Colon Protection Eating at least five to nine servings of fruits and vegetables a day will provide loads of dietary fiber, with the bonus that you'll get dozens of disease-preventing phytonutrients such as vitamin C and beta-carotene, says Lipski. She also recommends adding plenty of fiber-rich whole grains and beans to your diet. "That way, you can get about half your fiber intake for the whole day in one meal," she says.

Phytochemicals—called phytonutrients or phytomins by some—are proof positive that your mom was right: Vegetables are good for you. Really good for you. And when you eat these compounds, you get protection, too.

Once isolated from the plant material, phytonutrients can be recom-bined in various ways. A phytonutrient such as isoflavone, for instance, may be isolated and concentrated from soybeans, then put into a pill. Add some lycopene from tomatoes, some beta-carotene from carrots, and a few an-thocyanins from red cabbage, and you have a sort of vegetable soup in a pill that may, at least in theory, give you many of the health benefits of a real vegetable soup. A Surfeit of Nutrients Sometimes, there are so many nutrients included in a supplement that the soup is almost a stew.
Never consider supplements as a substitute for food; the best variety and quantities of phytonutrients are found in a diet that's rich in fruits and vegetables. consistency. Even though, based on their labels, products seem similar, the potency of each product is different. "You can't knock all these products," concludes Dr. Prior. "Some are good and some not so good. Right now, though, there's no way for the consumer to really tell which ones are good just from reading the labels.

Nutrient Value: Along with their power triad of phytonutrients and their fibrous pectin, apples are high in potassium, vitamin A, and trace minerals. Selection and Care: Back in the early 1990s, farmers used to spray apples with Alar, a chemical which caused apples to ripen uniformly.
