While it doesn't have the protein content of animal milk, it's rich in plant-based fats and various anti-cancer phytonutrients. Once you make a batch, you'll need to drink it within a day or two, since it tends to sour very quickly (it's alive, raw and nutritious, obviously), but I've found that you can preserve it in the refrigerator for several days longer by adding a couple of drops of food-grade hydrogen peroxide.

But the mechanism by which heat is produced causes internal damage to the delicate molecular structures of vitamins and phytonutrients. Minerals are largely unaffected, however, so you'll still get the same magnesium, calcium and zinc in microwaved foods as you would in non-microwaved foods, but the all-important B vitamins, anthocyanins, flavonoids and other nutritional elements are easily destroyed by microwave ovens.

In one cup of collard greens there are 5 grams of fiber, 225 milligrams of calcium, and more than half of a daily supply of vitamin C and beta-carotene. They are available fresh year-round with the peak season being December to March. They are also sold frozen. Add well-washed, roughly chopped collards, whose tough mid-rib has been removed, to a saucepan with an inch of boiling water. Bring to a rapid boil. Cover and simmer until tender. Drain and season, reserving the liquid, often called the "pot licker. |
It is also a good source of lutein, zeaxanthin, and quercetin and a significant source of the phytonutrients calcium, beta-carotene, and ascorbic acid. Fresh kale is most plentiful and least expensive in the winter months. It can be a lifesaver in meager times because even in the deepest winter, you can still harvest kale from the garden.
