As stated, soybean, flaxseed, canola, as well as pumpkin and walnut are the best sources of alpha-linolenic acid. (See vitamin f, Chapter 5, Vitamins.) Another fatty acid recentiy shown to be beneficial is eicosapentaenoic acid (EPA). It is a polyunsaturated, omega-3 fatty acid found in high concentrations in cold-water fish. Where it is consumed in large amounts, as among Greenland Eskimos or in fishing villages in Japan, there is reduced cardiovascular disease.
The essential fatty acids (EFA) include linoleic, linolenic, and arachidonic acids, collectively termed vitamin f. They are all polyunsaturated fatty acids that cannot ordinarily be synthesized in the body; although, if sufficient quantities of linoleic acid (omega-6) are present, arachidonic acid can be made. Alpha-linolenic, an omega-3 fatty acid that is found in special oils such as linseed (flax), rapeseed (canola), and soybean, is also essential and is the precursor of other important omega-3 oils EPA and DHA commonly found in fish.
Deficiency of vitamin f (essential fatty acids) can lead to dryness, scaliness, or eczema of the skin, as well as to reductions in the oil-soluble *This can be analyzed through a diet record (see Appendix). Since a gram of fat is 9 calories, a 2000-calorie daily diet could include 500-600 calories of fat, or 55-66 grams, daily. vitamins A, D, E, and K. Also, if there is deficient fat intake during growth periods, a retardation in the growing process may occur.

Some writers call them vitamin f,others call them essential fatty acids—meaning they are essential for good health. However, the body's need and use of them is very similar to its use of other vitamins. The body is unable to make unsaturated fatty acids. However, if there is sufficient linoleic acid present the other two fatty acids can be synthesized. These unsaturated fats help burn saturated fat in the body, thus they play a major role in preventing and alleviating cholestrol build-up.

Vitamin F (Unsaturated Fatty Acids— Linoleic, Linolenic, and Arachidonic) Facts: Fat soluble, made up of unsaturated fatty acids obtained from foods. Measured in milligrams (mg.). No RDI/RDA has been established, but the National Research Council has suggested that at least 1 percent of total calories should include essential unsaturated fatty acids. Unsaturated fat helps burn saturated fat, with intake balanced two to one. Twelve teaspoons sunflower seeds or eighteen pecan halves can furnish a day's complete supply.
Eighteen pecan halves can furnish an entire clay's supply of vitamin f. • Frequent consumption of foods containing artificial flavors, colors, MSG, and other additives can diminish the effectiveness of the immune system. • Raw peanuts contain enzyme inhibitors that make it difficult for your body to digest protein. • Bran is not a balanced food. • Pasta packed in clear cellophane, or with large cellophane windows, is subject to nutrient loss. • Water softeners can unhealthily increase your daily salt intake.

Collectively, these are sometimes known as vitamin f.) Since the body can make the first two if it has a sufficient supply of the latter, linoleic acid can be considered the quintessential fat for the human body. Of all the sources of linoleic and other essential fatty acids, flaxseed oil appears to be the best. Flaxseed oil is not just rich in EFAs, but in B vitamins, protein and zinc. The "lin" in linoleic and linolenic tells us that flaxseed oil is isolated from Linum usitatissimum, or linseed, another name for flax. "Usitatissimum" means "most useful.

The vitamin E content of most foods is related to the content of linoleic and linolenic acids, our most essential fatty acids (see Chapter 4, as well as vitamin f). Also, the content of active alpha-tocopherol varies among the different foods and oils. Safflower oil is one of the best sources, with about 90 percent of the E being the alpha variety. Corn oil has only about 10 percent alpha-tocopherol.
