A liver enzyme splits one molecule of beta-carotene in half, forming two molecules of active vitamin a. Beta-carotene is just one of at least 10 or so carotenes found in human blood. Beta-carotene is also a powerful antioxidant that neutralizes a damaging type of activated oxygen called singlet oxygen.

In addition, beta-carotene itself stimulates T-helper cells, which prevent the development of cancer, and studies have in fact shown that the substance protects against lung and colon cancer. Fifty thousand international units taken daily may prevent cancer in cigarette smokers. For general purposes, 20,000 to 30,000 IU of beta-carotene is extremely helpful.

Red beet roots contain much sugar and vitamin a. Cultivated beets are delicious raw, grated or juiced, preferably in combination with other vegetables, as they can sometimes be irritating to the throat. Sliced, torrefied and ground, they make an excellent coffee substitute, said to improve with age. It can also be fermented into a kind of sauerkraut.

Carotenoids
Probably the first phytochemical to be linked with health was beta-carotene, the orange pigment in carrots, sweet potatoes, and other plants, which can convert to vitamin a and which was cited as one of the first antioxidants, along with vitamins C and E.
