Both alpha-and beta-carotene and beta cryptoxanthin are what's known as provitamin A carotenoids, which means that the body can convert them to vitamin a. As opposed to animal sources of vitamin a, these plant sources cannot deliver a toxic amount of the vitamin. I find it interesting that all fruits (see tables in the back) and vegetables contain vitamin a (actually beta-carotene, which is the precursor to vitamin a), which is a fat-soluble vitamin, along with fat—nature has made sure that the vitamin a is absorbable and assimilated because of the presence of fat. Also, fats are a source of essential fatty acids. These are needed for the proper functioning of the endocrine system that controls hormone production, growth, reproductive activity, production of vitamin B12 in the intestines, and for helping to make calcium and phosphorus more available. |

Take 25,000 IU of vitamin a (not beta-carotene) daily for thirty days, then reduce the dosage to 10,000 IU daily. A deficiency of vitamin a will increase susceptibility to infection, as will deficiency of Vitamin D. Vitamin E protects the mucous membranes and can increase resistance to bacterial and yeast infections. Medical tesearchers say that many of these catotenoids, which ate responsible for the yellow and red pigments found in foods, may have healing properties.
