Mache 21 4 38 38 2 Romaine lettuce 16 2 24 68 1 Watercress 11 3 43 120 <1 OTHER GREENS Many other types of green plants, especially kale, col-lards, and dandelion greens, are rich in carotene, vitamin C, flavonoids, and other substances that help protect against degenerative diseases. They are also a good source of fiber and many minerals, particularly iron and calcium. Ounce for ounce, fresh collard greens, kale, and mustard greens have about as much calcium as whole milk, and dandelion and turnip greens actually have more.
In addition, take 25,000 units of a multiple carotene complex twice daily; 500 milligrams of vitamin C with bioflavonoids four times daily; 400 international units of vitamin E twice daily, in morning and evening; and 200 micrograms of selenium daily. Also take 50 milligrams of alpha-lipoic acid three times daily. Note: If you are pregnant, or intend to get pregnant, or if you have liver disease, consult your doctor before taking supplemental vitamin A.
Take 5 milligrams of a carotene complex with lutein three or four times daily. NUTRITIONAL SUPPLEMENTS ¦ Chinese medicine teaches that the eyes and liver are related. When liver function is enhanced, there is a general improvement in the eyes. Choline is required for the proper metabolism of fats in the liver, and aids in the transmission of nerve impulses. Take 350 milligrams of choline twice a day. ¦ Flaxseed oil provides essential fatty acids that are missing in most people's diets. Take 1 tablespoon, or 500 to 1,000 milligrams in capsule form, twice daily.
Take the following antioxidant nutrients: 25,000 international units of a carotene complex twice daily; 25,000 international units of vitamin A twice a day for two weeks; 500 milligrams of vitamin C with an equal amount of bioflavonoids three to four times daily; 400 international units of vitamin E twice daily, in morning and evening; 200 micrograms of selenium twice a day; and 15 milligrams of zinc twice a day. In addition, take 25 milligrams of pine-bark or grape-seed extract three times daily.

A reasonable measure of this is observing a yellowish orange hue to the palms. A blood test can verify.) Beta Plex from Scientific Botanicals of Seattle provides beta plus other carotenes. HERBAL REMEDIES • Certain herbs are known to help bring on a menstrual period: false or true unicorn root, squawvine, pasqueflower, and black cohosh. Take a combination formula (one to two capsules three times a day) or strong tea (up to three cups a day). OTHER THERAPIES • Treat thyroid and adrenal dysfunction, if found. • Acupuncture has proven effective for treating amenorrhea.
Although the studies pertain only to the carotene extracts of spirulina, and not to the whole product, the nutrient content of algae (see Chapter Five) and other chlorophyll food supplements like wheat grass or barley grass (juice or powder) make them worthwhile to consider as food supplements. HERBAL MEDICINES such as ginseng, licorice root, echinacea, astragalus, osha, lomatium, and others have been shown to impart numerous benefits to immune function, particularly the cell-mediated branch.

Scientists suspect that chemicals called glucosinolates, which are found in high levels in the vegetable, are why they are so potent. CARROTS Carrots are loaded with beta-carotene, which has been tied to a variety of lowered cancer rates. One study in Edinburgh, Scotland specifically tied carrots to a lowered risk of colon cancer. ClTRUS Rich in fiber and vitamins A and C, oranges, grapefruits, lemons and limes also contain a substance called limonene that may work by stimulating the body to produce cancer-inhibiting enzymes.
In nature, vitamin A can be found in fish oils and liver (in the form of retinol) and in yams, leafy vegetables and yellow fruits (as carotene). Vitamin A is important for fighting infections, boosting your immune system and maintaining healthy skin. It is also essential for maintaining good night vision. B Vitamins So far, scientists have discovered 16 B vitamins, nutrients that help convert carbohydrates into energy. If you have a vitamin B deficiency, your body cannot process food effectively and you tend to be tired, constipated and sick to your stomach.

To prevent or slow down the disease, just eat a diet packed with five ingredients — potassium, magnesium, fiber, vitamin C, and beta carotene. Unlike many other foods, sweet potatoes contain all five, and all but magnesium in abundance. To add even more bone-building power, top a baked sweet potato with a slice of your favorite low-fat cheese and a handful of chopped parsley. The cheese will add calcium, the original osteoporosis fighter. The parsley will replace the vitamin C lost in baking. Sweetens your mood. Snack on a sweet potato, and you may lift yourself out of the doldrums.

Physicians and their patients are watching the current number of studies on antioxidants (fractions of vitamin complexes) such as beta carotene, ascorbic acid (fractionated vitamin C), and alpha-tocopheral (fractionated vitamin E) in the prevention of degenerative diseases. The results have been conflicting. However, the most important message is that chemically synthesized supplements are no substitute for real food complexes. Foods contain an intricate, interconnected network of components of known and unknown nutrients, which work together for the effectiveness or formation of the body.

Excess carotene is stored in the skin and lends an orange pigment to flesh that is initially visible in the palms of the hands. Beta-glucan (BAY-tuh GLOO-kan). Beta-glucan is the main soluble fiber portion of oat bran. (See "Fiber" on page 44.) Beta-sitosterol (BAY-tuh SIGH-to-STER-awl). Beta-sitosterol is found in nuts, seeds, and saw palmetto and, to a lesser extent, in almost all plants. Beta-sitosterol supplementation in animal studies resulted in decreased formation of chemically induced tumors of the colon.
After analyzing the components of tomatoes, they concluded that lycopene, a phytochemical that is a member of the carotene family, which has potent antioxidant capabilities, might offer an answer to the question "How can we prevent prostate cancer?" The body of knowledge continues to expand. In Vidalia, Georgia, home of Vidalia onions, it was noticed that stomach-cancer rates are half the national average. Then, this information was connected to data from an ecological study done through a cooperative effort of scientists from Cornell University Medical School and the Chinese government.

A recent British study found that cancer rates dropped by 40 percent in men with the most blood beta carotene, compared to those with the least.
New research shows that food substances, such as beta carotene, can attack and destroy tumor cells and retard the growth and spread of tumors. A recent report from the University of Hawaii's Cancer Research Center in Honolulu indicated that vegetables' chemother-apeutic powers stifled cancer progression and virulence, and prolonged survival time. In that study of 463 male and 212 female lung cancer patients, researchers discovered that eating lots of vegetables of all types nearly doubled survival time in women.
BOTTOM LINE • To prevent macular degeneration, eat a fruit or vegetable rich in beta carotene every day. Best bets: sweet potatoes, carrots, spinach, kale and pumpkin. Also be sure to get adequate zinc. Oysters are by far the richest zinc source. One three-once tin of smoked oysters has as much zinc as that found to retard macular degeneration in studies. (For a list of other zinc-rich foods, see page 492.) METABOLISM: CALORIE-BURNING FOODS Eating hot spicy foods such as mustard and hot peppers can actually speed up metabolism, burning off calories.
Orange melons contain antioxidant beta carotene. Milk. Cancer-fighting powers, possibly against colon, lung, stomach and cervical cancers, especially in low-fat milk. One study detected less cancer among low-fat milk drinkers than non-milk drinkers. May help prevent high blood pressure. Skim milk may lower blood cholesterol. Milk fat promotes cancer and heart disease. Milk is also an unappreciated terror in triggering "allergic" reactions that induce joint pain and symptoms of rheumatoid arthritis, asthma, irritable bowel syndrome and diarrhea.
A comparison of the diets of women who did and did not have endometrial cancer showed that those who ate carrots, spinach, broccoli, cantaloupe or lettuce (foods high in carotene) at least once a day were only 27 percent as likely to have the cancer as women who ate those foods less than once a week. Eating yogurt, cheese and other calcium-rich foods also reduced the risk significantly.

In a study published in 1992, researchers at Harvard Medical School examined the link between dietary intake of vitamins C and E, carotene, and riboflavin and cataract extraction in over 50,000 women taking part in the Nurses Health Study. The results showed that the risk of cataract was 45 per cent lower among women who used vitamin C supplements for ten or more years.57 Further results from this study reported in 1997 in the American Journal of Clinical Nutrition also suggests that vitamin C supplements taken for long periods can reduce the development of cataracts.

After about five years, the researchers discovered that people taking a specific antioxidant vitamin-mineral combination (beta carotene, vitamin E, and selenium) experienced a statistically significant drop in their death rate from all causes, not just cancer. Those taking the combined supplement showed a thirteen-percent drop in deaths from all types of cancer and a twenty one percent decline in stomach cancer deaths. Nitrosamine blockers—Certain food additives are also implicated as a causative factor in stomach cancer.
