The theory is that vitamins C and E, plus beta-carotene and other carotenoids, as well as the minerals selenium, copper, and manganese, may be instrumental in supporting good health through their actions in the body. Antioxidants appear to protect cells from damaging oxygen-free radicals or oxidants. Oxygen-free radicals are released in the body as the result of the breakdown of food into fuel. These free radicals appear to damage cells in much the same way oxygen causes some metals to rust or oxidize.

Dark green leafy vegetables, such as spinach or kale, are rich in folic acid; winter squash is high in beta-carotene. Pale-colored vegetables (like cucumbers and zucchini and other summer squashes, mushrooms, iceberg lettuce) tend to be full of water and not too much else. While it is commonly assumed that fresh vegetables contain more nutrients than frozen and canned ones, you should consider where you live in relation to where the vegetables are harvested.

Tomatoes contain both alpha- and beta-carotene, as well as lycopene, an extremely powerful antioxidant. Even the green herbs rosemary, oregano, and thyme have antioxidant compounds. Substitute these healthy foods for the processed commercial snacks high in carbohydrates and trans-fatty acids that are so common today. Cut the fruits and vegetables up ahead of time, if possible, so you have something easy to reach for. Fats and Oils. It is essential to cut down on all fats and oils except omega-3 oils, which you are increasing. For cooking oils, use olive or canola.

And most are excellent sources of antioxidants such as vitamin C, vitamin E, and beta-carotene, which have been shown to slow the aging process. 2. Add Physical Activity at Every Opportunity Take the stairs instead of the elevator. Park farther away from the office, mall, or train station and walk. Do ten minutes on your stationary bike while you're waiting for pasta to cook. Rake leaves. Vacuum carpets. Mow the lawn. Play Marco Polo in the neighborhood pool with a bunch of eight-year-olds.

Also, add 15,000 international units of beta-carotene to your supplement program. Coenzyme Q10 Slow, sluggish, lethargic, dull—this is how you feel when you're tired and your energy level is low. This same state could describe what happens at the cellular level when your mitochondria, the powerhouses that fuel each of your cells, do not produce adequate energy. The result is a general slowdown in the cells and decrease in optimal function. One nutrient that is essential for energy production in every cell of your body is coenzyme Q10 (CoQ10).

They strengthen bones and slow bone loss that could lead to osteoporosis (calcium and vitamin D), shore up the body's natural defenses (vitamin C and zinc), and possibly delay some of the effects of aging (vitamins A and E, beta-carotene, and other antioxidants). And that's just the vitamins and minerals. There are several other substances that can be taken on a daily basis to promote wellness and/or prevent specific medical conditions.

By eating plant foods in their natural state, you orange vegetables are rich in beta-carotene. Unprocessed oils, whole grains, and raw nuts and seeds contain vitamin E. Citrus fruits, berries, and other fruits have high levels of vitamin C. In addition, plant foods contain an abundance of phytochemi-cals. These are unique compounds produced by plants to protect them from environmental hazards, such as ultraviolet radiation from the sun, extremes of heat and cold, and insects.
The top-scoring individuals also had higher levels of beta-carotene, another antioxidant, but the difference in their levels and those of the low scorers was not statistically significant. In animal studies, vitamin E has been shown to reduce the degeneration of cells in the hippocampus (the area of the brain that routes short-term memories to long-term storage) after injury to that area. In test-tube studies, vitamin E reduces neuron death associated with beta amyloid, the protein that causes senile plaques in the brains of patients with Alzheimer's disease.

One serving fulfills the daily requirement of vitamin E and provides significant amounts of vitamin C, beta-carotene, and glutathione.79 One of the implications of my discovery, I realized, is that purslane and similar wild plants must have contributed a substantial amount of LNA and antioxidants to the diets of early humans. Purslane, in particular, is very widespread. Ranked as the eighth most common wild plant in the world, it was also one of the first plants cultivated by early humans: Purslane seeds were found in a cave in Greece that was last inhabited 16,000 years ago.
Eating fat-free salmon makes as much nutritional sense as buying carrots that have been stripped of their beta-carotene or oranges that have been hybridized to be low in vitamin C. 1909 1935 1965 1980 1983 1986 1989 1992 Year Figure 3-2. Changes in Our Consumption of Fat, 1909-1992 This graph shows the dramatic changes in oil consumption that took place between 1909 and 1992. At the beginning of the twentieth century, butter, lard, and shortening were the most commonly used fats.
These aren't vegetables, but they are unusually high in beta-carotene, which is one of the chief vitamins in orange and yellow vegetables.
The sugar and fat add calories, but they don't cancel out the beta-carotene. 4. Don't be cowed by children who would rather eat pizza than peas. Although you don't want to force your kids to eat vegetables, don't let them force you to take them off the menu. If you let some kids call the shots, it will be pizza, hot dogs, and hamburgers-period. 5. Make single servings of the main dish. If your kids want seconds, their only choice will be fruits and vegetables. 6. Catch them in a moment of weakness. Serve the salad separately at the beginning of the meal, when they are most hungry.

Specifically, vitamins A, C, E and beta-carotene; the trace minerals selenium and zinc; and accessory food factors, such as bioflavonoids and coenzyme Q10, all help to scavenge free radicals through antioxidant activity. They help prevent cancer, heart disease, premature aging and tissue degeneration. Many herbs also help in the fight against excess free radicals. Destructive Agricultural Practices Modern agricultural practices have adversely affected the quality of our food supply.

Examples are lutein in dark-green kale; lycopene in tomatoes; beta-carotene in sweet potatoes, squash, carrots, and other orange fruits; and zeaxanthin in pepper. Deeply pigmented fruits such as blueberries, cantaloupe, and kiwi contain other antioxidants. Grapes and grape leaves contain reservatol, and grape seeds contain the antioxidant proanthocyanidin. Coenzyme Q10, a potent antioxidant in every cell, is found in spinach, peanuts, and sardines. Green tea and even black tea contain important antioxidants called tannins, which are polymers of phenolic compounds.

Of the 800 or so carotenoids that have been isolated, the most famous are beta-carotene, alpha-carotene, lutein, zeaxanthin, lycopene, and beta-cryptoxanthin. Most carotenoids are pigmented molecules that are red, yellow or orange in color. A few carotenoids, such as phytoene and phytofluene, are colorless. Over 200 epidemiological studies18 show that a diet rich in fruit and vegetables will lower the risk for a variety of cancers.
While vitamin A and beta-carotene are considered interchangeable, more recent evidence shows that these two nutrients have some overlapping functions and some distinctly different functions. A drug analog of vitamin A (all trans retinoic acid) has become a near cure all for acute promyelocytic leukemia, with one study showing a 96% cure rate.1 Some companies use an emulsified vitamin A so that it stays in the blood stream longer, which may be important for extremely high doses of A (> 100,000 iu/day) in cancer patients.

Vitamin Bg Oral contraceptives deplete vitamin Bg which increases the risk of cervical dysplasia (Simpson 1980; Salih et al. 1986), If a woman has diabetes or is overweight and takes oral contraceptives, her need for vitamin Bg is increased. Vitamin Bg plays an important role in protein synthesis, carbohydrate metabolism, and glucose tolerance. Life Extension recommends taking 50-250 mg of vitamin Bg a day, if you use oral contraceptives. Vitamin C Vitamin C has been reported to be an independent risk factor for dysplasia (Ho et al. 1998).

Vitamin A deficiency causes reduced lymphocyte response to antigens and mitogens, while beta-carotene supplements stimulate immune responses.2 There is extensive literature supporting the importance of vitamin B-6 on the immune system. In one study, B-6 supplements (50 mg/day) provided a measurable improvement in immune functions (T3 and T4 lymphocytes) for 11 healthy well fed older adults.3 Various B vitamins have been linked to the proper functioning of antibody response and cellular immunity. Folate deficiency decreases mitogenesis.
