Palm oil is a source of beta-carotene and antioxidants in its unprocessed state; how much of these antioxidants are still retained depends on the degree of processing. It is a stable fat that has 50 percent saturated, 40 percent monounsaturated, and 10 percent polyunsaturated fatty acids. | Among other nutrients, the most outstanding antioxidants are the vitamins C, E and beta-carotene. Selenium is an antioxidant mineral essential to any program of cancer preventive care. Make sure it is part of your arsenal, and is combined with all the other minerals. True, Olestta will reduce the total grams of fat consumed, but it's a high nutritional price to pay for reducing a serving of potato chips from 150 to 70 calories. Researchers in the Framingham osteoarthritis study evaluated the diets of 640 people to see if there was a link between their osteoarthritis and their intake of vitamins C and E and beta-carotene, the highly pigmented component that is converted to vitamin A in the body. Because it interferes with fat absorption, it also reduces the body's levels of fat-soluble nutrients, such as vitamin E and beta-carotene. People taking the drug may have oily stools, stool "spotting," excessive flatulence, or stomach inflammation (gastritis). It also seems to inhibit the absorption of EFAs.
