Good food sources of beta-carotene include carrots, pumpkins and sweet potatoes. Fresh carrot juice is a tasty alternative. The carrot juice can be mixed with apple and beetroot juice, all of which are good for the skin. Broccoli is the rising star on the cancer front. Studies done at the Roswell Park Memorial Institute in Buffalo, New York have shown that eating lots of broccoli can substantially lower the risk of cervical cancer in women. Additional research has shown that men who smoke and eat dark-green vegetables (like broccoli) have half the lung cancer risk of smokers who don't eat this edible flower.

Carotenoids
Probably the first phytochemical to be linked with health was beta-carotene, the orange pigment in carrots, sweet potatoes, and other plants, which can convert to vitamin A and which was cited as one of the first antioxidants, along with vitamins C and E.
